To change the Discord notification sound back to the one you’re used to, simply restart the app. Do this by pressing CTRL + R while in the app. Once the refresh is completed, the new notification sound should be gone.

How to turn off Discord notifications
If you would like to turn off Discord notifications altogether, then click on the gear icon near the bottom-left of the app. This is the “Users Settings” section located close to your Discord username. Next, navigate to the “App Settings” section on the left and click on the “Notifications” option. Then, you may toggle the different Discord notifications on and off.
